Alain Gayrel, Caves de Gaillac

Alain majors in Sauvignon Blanc.  His wines have an ideal southern exposure, and the terrain consists of white clayey-calcareous subsoil – 3 to 4 metres deep – with very stony topsoil reflecting the heat onto the vines.

Domaine Stephane Vedeau, Languedoc

Stephane Vedeau and Claude Serra make their selections from the best parcels of vines located on the hillsides along the Mediterranean Sea – well known for the natural restriction of the yields and a perfect micro climate.  Grapes are harvested at night to preserve their natural acidity and prevent oxidation.

Chateau de la Mirande, Coteaux de Languedoc

The terroir from this vineyard is a clay-limestone mix on south-facing terraces with the vines between 30 and 100 years old.  Green harvesting and organic viticulture are part of Joseph Albajan’s philosophy for this ancient grape variety, traditionally drunk with oysters or mussels.

Champs du Moulin – Vin de Pays Vaucluse & Gascogne

Temperature controlled fermentation after a gentle pressing of the grapes.  Wine is left on its lees for 4 months prior to bottling.. The red is a combination of the softness and fruitiness from the Grenache complimenting the weight and structure of the Syrah.
